Making a good gelato is not enough to be considered a good ice-cream maker: it's also necessary to know how to retain the gelato's organic qualities and display it with art and originality in order to attract customers.
As soon as it's produced the artisan gelato must be brought quickly to the hardening and storage temperature in the appropriate fridge, in order to prevent the loose water still present in the gelato from forming big ice crystals that ruin the consistency and palatability. It will therefore be kept in a storage compartment, which has the double function of knocking down the temperature and conserving the gelato.
Special display cases have been studied in which the cold produced is proportional to the quantity of gelato displayed and the temperature remains homogeneous thanks to a sophisticated ventilation system.
The inclination and height of the gelato tubs, shape of the glass and automatic defrost heighten the taste of one of the most appetizing and inviting food products, enjoyed by both children and adults in every season.
